Takagi Koji Shoten

A shop founded over 190 years ago specializing in koji mold cultures used in fermentation. Products include koji produced using a recipe passed down for generations, miso, sweet sake (amazake), and koji-based marinades. A space with an earthen floor is repurposed as a gallery for irregular exhibitions.
